  • 2/3 cup goat cheese (I use Montchevre logs to get those perfect crumbles)
  • 1/4 cup toasted walnuts (crushed for extra texture)

Method
 

  1. In a medium bowl, whisk together the sour cream, freshly squeezed lemon juice, lemon zest, fresh dill, chives, and honey until smooth and well combined. Season with salt and freshly cracked black pepper to taste. This dressing base should be balanced—the honey rounds out the lemon's acidity, creating a more complex flavor profile. Set the dressing aside while you prepare the vegetables.
  2. Slice the cucumbers into uniform 1/4-inch rounds—this thickness allows them to absorb the dressing without becoming mushy. Thinly slice the red onion into half-moons for even distribution throughout the salad. Add both the cucumbers and red onion to the bowl with the creamy herb dressing from Step 1, and gently toss until all vegetables are evenly coated. I like to use a rubber spatula here rather than a spoon—it prevents bruising the delicate cucumber slices.
  3. Transfer the salad to the refrigerator and chill for at least 1 hour, or up to 5 hours if time allows. This resting period allows the cucumbers to soften slightly and the flavors to meld together beautifully. The cold temperature also helps keep the goat cheese from warming and losing its structure when added later.
  4. Remove the chilled salad from the refrigerator. Crumble the goat cheese directly over the top—I use Montchevre logs because they crumble into perfect, bite-sized pieces rather than becoming pasty. Gently fold in the crushed toasted walnuts to add texture and a subtle nutty depth. Give the salad one final, gentle toss to distribute the cheese and walnuts throughout, then serve immediately while the salad is still cold and the cheese maintains its shape.
