  • 1/2 cup scallions (sliced)
  • 1/2 cup rice vinegar
  • 1/3 cup olive oil
  • 1.5 tbsp toasted sesame oil
  • 3 tbsp soy sauce
  • 3.5 tbsp honey
  • 1/2 tsp salt
  • 1.5 tsp chili flakes
  • 1 tbsp toasted sesame seeds

Method
 

  1. Thinly slice the cucumbers into 1/8-inch rounds and place them in a large mixing bowl. Mince the fresh ginger finely—I find that freshly minced ginger has so much more punch than pre-minced, so it's worth the extra 2 minutes. Slice the scallions and set aside. This prep work takes just 10 minutes and sets you up for a seamless assembly.
  2. In a separate small bowl, whisk together the rice vinegar, olive oil, toasted sesame oil, soy sauce, and honey until the honey is fully dissolved and the dressing is emulsified. This prevents the oil and vinegar from separating once they coat the cucumbers. Taste the dressing and adjust sweetness or saltiness to your preference—the flavors will meld beautifully once everything sits together.
  3. Pour the dressing from Step 2 over the cucumbers in the bowl. Add the salt, chili flakes, and sliced scallions from Step 1, then gently toss everything together until the cucumbers are evenly coated. The salt will help release some of the cucumber's natural liquid, which will dilute the dressing slightly as it sits—this is exactly what you want for a balanced, refreshing salad.
  4. Cover the salad and refrigerate for at least 1 hour to allow the flavors to meld and the cucumbers to absorb the dressing. Just before serving, give it a gentle stir and transfer to a serving bowl or platter. Sprinkle the toasted sesame seeds on top—I add them at the very end so they stay crispy rather than absorbing moisture from the salad.
